Whole Grains and Grain Products

By Gale and Alex Jack

The Incas called quinoa, their staple, "the Mother Grain," and it is traditionally grown in terraced fields in Peru, Equador, Bolivia, and other pacific coastal highlands of South America. Today it is also grown in the mountainous regions of North America including the Pacific Northwest, British Columbia, and Colorado and New Mex ico.

Quinoa can be enjoyed by itself or mixed with other grains. It may also be used in baking and combined with beans, vegetables, and other foods. We enjoy quinoa added to other grains or as a soft morning cereal.
